Make sure after you do the Video option in the ps3 settings, you do the sound options and put the composite hook up as your output. If this does not work, make sure you know where that connections are going and that they are in the hole securlyHow do i get sound, if i hook up a HDMI cable straight to my projector. I have a bit information about this, As for the audio, connect the HDMI cables from the cable box and PS3 and confirm there's sound. If not, check the settings on each to insure they're set to pass audio over HDMI. If so, run a single optical audio cable out from the TV to an optical input on your receiver. (That is an optical OUTput on the TV, right?) Otherwise, run individual optical audio cables from the output of the cable box and PS3 into the receiver. Hope this information will help you.
Use an optical cable from your receiver:

Or

use a 2 RCA Audio cable from your receiver

Your projector has no speakers so you can send the picture via the HDMI but you will need audio cables be it normal RCA or Optical for the audio going to the receiver.
